Mexican cuisine is not a trend. It is a civilization's answer to the question of how to make something extraordinary from what the land provides. At Myla, we take that question seriously every single day.
Our chiles are sourced from Oaxaca and Jalisco. Our corn is nixtamalized in-house. Our salsas are roasted over open flame — never blended raw. This is not convenience cooking dressed in color. This is craft, practiced with intention.
About Us
Myla Mexican Bistro was born from a simple conviction: that the food you grew up with doesn't need to change — it needs to be made correctly. Our kitchen in Colton is where that conviction lives.
We source from local farms when we can and import the rest directly — chiles from Oaxaca, vanilla from Veracruz, corn from Jalisco. Every dish on our menu has a reason for being there. If it doesn't belong, it doesn't stay.
Our dining room is warm, unpretentious, and full of people who came for the food and stayed for the feeling. That's the standard. We don't lower it.
